Wedding at Château d'Arche, Sauternes

Fine dining in harmony with a Sauternes grand cru

Sauternes, an invitation to indulge

Château d'Arche lies in the Sauternes vineyards, around 45 minutes from Bordeaux. Vines as far as the eye can see, a house with a long history, well-tended gardens: a wedding here is celebrated the way you open a great bottle, with a touch of ceremony and a great deal of pleasure.

On a wine estate, wine is never just an accompaniment. It sets the tone of the meal, and I like to build my menus around it, looking for the balance between sweetness, acidity and richness.

I work with the venue's catering area, arrive with my kitchen brigade and service team, and run the kitchen myself on your wedding day.

"A great wine deserves a great table."

A wedding among the vines of the Bordeaux wine country

In the heart of the Sauternes vineyards

Sauternes sweet wines are born of a rare phenomenon: noble rot, which concentrates the sugars in the grapes each autumn. The result is a golden, rich wine lifted by lovely freshness.

That complexity is a wonderful playground for a cook. Sauternes is not just for dessert: it pairs happily with a starter, a cheese and sometimes even poultry.

For your wedding, I suggest using these pairings with restraint, alternating with dry local wines so the meal stays light and well paced.

Pairings with Sauternes wines

MomentDishWhy it works
StarterLightly cooked duck foie gras, fig chutneyThe richness of the foie gras meets the sweetness of the wine, while its acidity refreshes the palate.
Main courseFree-range chicken with cream and morelsA soft, creamy sauce matches the roundness of the wine without overpowering it.
CheeseRoquefort or another blue cheese, walnut breadThe saltiness of the cheese contrasts with the sweetness of the wine: a classic pairing.
DessertThin apricot tart, light vanilla creamThe apricot and candied fruit notes in Sauternes echo those in the dessert.
Petits foursLemon tartlets and candied orange zestThe gentle bitterness of citrus balances the richness of the wine.

These pairings are starting points: we adjust them together to the wines you choose and the season.

Your questions about a wedding at Château d'Arche

Do you travel as far as Sauternes?
Yes, I work throughout the Gironde. Château d'Arche is around 45 minutes from Bordeaux, a journey I build into my brigade's schedule.
Should Sauternes be served with every course?
No, I don't recommend it. It is better to choose one or two key moments of the meal, such as the starter or dessert.
Do the pairings work with a vegetarian menu?
Absolutely. Sauternes goes beautifully with cheese, a fruit tart or a mushroom dish: I create vegetarian pairings that are every bit as indulgent.
How do you work in the château's kitchen?
I use the catering area the venue provides. I carry out a site visit beforehand and bring whatever additional equipment is needed.
