A family house on the peninsula

In Cap-Ferret, Demeure du Siècle welcomes couples the way a family home would. The villa is yours alone for the occasion, the view sweeps across the Bay of Arcachon and the beach lies just below, down a flight of steps.

A place like this calls for light, bright cooking that puts the produce first. I picture meals where the Bay turns up on every plate, with precise cooking and clean, confident seasoning.

A villa is not a reception hall: the kitchen, the power supply and the movement of staff all have to be worked out in advance. That is the heart of my job as a private chef, and it is what leaves you free to think only of the sea and your guests.

A barefoot wedding by the water

Direct access to the beach changes the whole feel of the day. Photos are taken facing the water, guests happily wander down onto the sand between glasses, and the drinks reception takes on a seaside party atmosphere.

I build that into the menu: canapés that are easy to enjoy standing up, dishes that hold up to the evening breeze, fresh desserts rather than heavy creams.

Dinner itself takes place in a marquee in front of the house: I size my pop-up kitchen and service team so that everything arrives hot and on time, even out in the open.

Canapés

Is the villa's kitchen enough for a wedding dinner?
It depends on the size of the wedding. But most of the time I set up a pop-up kitchen, in the garage if needed.
What if the weather turns in Cap-Ferret?
Dinner is held in the marquee; if the weather is bad, we adapt on the day.
Can we take photos on the beach during the drinks reception?
Yes. However, there are a lot of steps down to the beach, so I avoid setting up stations or serving down there. If you would like service on the sand, it requires additional staff.
Do you work elsewhere on the peninsula?
Yes, throughout Lège-Cap-Ferret and all around the Bay of Arcachon.
